Spanish Omelette Sandwich | スパニッシュオムレツ・サンドウィッチ

Spanish omelette with potatoes and onions, a recipe from a Spanish (Madrid) cooking expert.

It’s a simple dish but the semi-mashed potatoes and the onion aroma blends quite well into the omelette and above all, it serves well for lunch with a long baguette cut into half with a simple stash of butter and mayonnaise.  I personally prefer to toast the baguette which gives it a nice contrast of a crispy crust and inner soft bread, omelette and potatoes.

Great for outdoor activities or a long drive!!!!

Spanish Omelette Recipe –

  • 5 eggs
  • 3 Potatoes (Danshyaku) 500g
  • 1/4 Chopped Onions
  • Vegetable Oil / Olive Oil
  1. Peel the potatoes and slice it in thin 5mm widths. Finely chop the onions.
  2. Beat the eggs in a large bowl adding 2/3 teaspoon of salt.
  3. Place the potatoes in frying pan (diameter approx. 20cm) and add a combination of vegetable & olive oil, until 90% of the potato is covered for shallow frying. Fry the potatoes for approx. 5-6 minutes and make sure the potatoes are not burnt, mixing it from time to time.
  4. Add the finely chopped onions and let it blend well with the potatoes, 2-3 minutes.
  5. Drain the potatoes with a sieve, mashing the potatoes lightly adding into the egg mixture.
  6. Pour the egg and potato mixture a frying pan over medium heat. Once the outer rims start to dry and solidify, cover the frying pan using a plate and turn it upside down (leaving the egg onto the plate). Slide the omelette back into the frying pan (with the wet side downwards). Shape the edges of the omelette as you go along and cook for 1 minute, repeating this process twice.


Spanish Omelette Recipe | スペイン風オムレツ

  • 卵・・・・・・・・・・5個
  • ジャガイモ(男爵)・・・3個 (500g)
  • 玉葱・・・・・・・・・1/4
  • オリーブ油、サラダ油
  1. ジャガイモは4等分にして、5mm幅の薄切りにする。玉葱はみじん切りにしておく。
  2. ボウルに卵を溶き、小匙2/3の塩を加える。
  3. 直径約20cmのフライパンにジャガイモを入れ、9割方オリーブ油とサラダ油を半々に入れ加熱する。
  4. 油が沸々としてきた中火にして、ジャガイモが焦げない様に時々混ぜながら5〜6分煮ます。
  5. ④に玉葱を加え、2〜3分煮たらザルに上げて油を切る。へらでジャガイモを軽く潰して②に注ぎ入れる。
  6. フライパンに油を馴染ませて、中火にして⑤を注ぐ。へらで大きく混ぜ、周囲が固まってきたらフライパンに皿をかぶせ、返し、皿から卵を滑らすようにフライパンに戻す。卵の縁をへらで寄せる様にして1分焼、同じ要領であと2回繰り返しながら焼く。
