


TOGAN, the Winter Melon|冬瓜の煮物

Ingredients
- Togan | 冬瓜・・1/4 large or 1/2 medium cut
- Flounder broth or seafood broth | 出汁・・approx. 500cc
- Sake | 酒・・1tbs
- Mirin|みりん・・1tbs
- Light Soy Sauce|薄口醤油・・1tbs
- Salt|塩・・1tbs
- Kudzu powder | 葛粉・・1tbs add with cold water
Instructions
- Boil the FLOUNDER for about 10-15 minutes in low heat, extracting the froth for a nice clear soup. | ヒラメの出汁を取ります。ヒラメは綺麗に洗い、水から静かに10-15分弱火でアクのを取りながら透明な出汁に仕上げます。
- Cut the TOGAN into mouth size pieces. | 冬瓜は皮を剥き、一口大に切ります。
- Combine the FLOUNDER SOUP + TOGAN + CONDIMENTS, bring to a medium boil until the TOGAN is soft. | 冬瓜を出汁に入れ、中火で冬瓜が柔らかくなるまで煮ます。(10分程度)
- Dilute the Kudzu powder (Flour from Kudzu Plant) with some water and add this to the soup. The Kuzuko actus like corn starch brings thickness to the clear soup. | 最後に葛粉を水で溶かしとろみをつける。
