Remove the belly and gills, wash them well and soak them in 8-10% salt water for about 1 hour.
Drain the water from the sardines, wiping the water with a paper towel.
Dy the sardines in a drying net or bamboo colander (with a newspaper underneath to catch the drip).
This is my working process :
Prepare the sardines in the evening → expose them to the cold wind at the balcony overnight → expose it to the Sun the next day morning → until the skin visibly looks dry → store it in the refrigerator until cooking
