Paella | パエリア

Instructions

1. Saffron - Wrap the saffron in aluminum foil and bake it in the toaster for about 1 minute or less. Finely rub the wrapped foil and place the saffron in a warm cup of water (1 cup) and set aside for about 1 hour for the colour to emerge.｜サフランはアルミ箔で包み、トースターで約1分空焼きする。アルミ箔に包んだまま軽く揉んで細かくし、カップに入れる。ぬるま湯1カップ（※分量外）を注ぎ、1時間以上置いて色出しする。
2. Mussels and Clams – Wash the clams and remove any dirt, sand; rubbing each other. Place them both in a pot and add a little bit of water (or I prefer white wine) and braise for about 5 minutes over medium heat until the broth starts to ooze out from the clams. Strain the juice (for use) and keep the clams in the pot to keep warm.｜ムール貝はヒゲを取り除き、貝同士を擦り合わせて表面の汚れを落としてから流水で洗う。アサリは砂抜きする。鍋にムール貝、アサリ、水を加えて強火にかけ、沸騰したら中火に落として約5分煮る。貝は口が開いたものから取り出し、鍋の煮汁は漉す。
3. Broth – Combine the seafood broth (2) and saffron (1) making the broth to 3 cups adding the chicken cube.｜貝の煮汁3カップ（足りないときは水を足す）とサフラン水1 カップを合わせ、チキンブイヨンを加えておく。
4. Chicken – Remove the excess fat and cut into small chunks with bone and salt and pepper, set aside.｜鶏肉は余分な脂や皮を取り除き、両面に塩、コショウをする。
5. Squid – Clean the squid and cut the legs and body into small pieces.｜イカは下処理をし、胴は皮をむいてから輪切りに、足は食べやすい大きさに切る。
6. Onions – Slice the onions into thin pieces. Green Peas and Green Beans – Let it pass through hot water and cool it with cold water to retain the nice fresh green colour.｜玉ねぎは薄切りにし、グリーンピースとインゲンはサッと茹でて水をかけて水気をきっておく。
7. Red Pepper – Slice it to about 1 cm in thickness.｜赤ピーマンは1cmに切る。

9. Using a paella pan (30cm/12”) (Frying pan can be used as a replacement) pour some olive oil and sauté the chicken over medium heat for about 5 minutes.｜パエリア鍋にオリーブオイルを入れて全体に馴染ませ、鶏肉を加えて中火で焼き色をつける。（5～6分）
10. Add the squid, shrimp. To produce a nice flavour, press the shrimp head as you sauté so the juice will ooze out from the heat. Remove the squid and shrimp, set aside.｜イカ、海老を加える。海老は木ベラで頭を押しつけるようにして旨味を出す。焼き色がついたものから取り出す。
11. Reduce the heat to low, add the chopped onions and chopped garlic. ｜玉ねぎを加えて弱火で炒め、ニンニクのみじん切りを加えて香りを立たせる。
12. Add the tomato can and boil to reduce the liquid (to a paste-like). ｜トマトの水煮を加え、潰しながら水分がなくなるまで弱火で煮詰める。
13. Add the green beans, red pepper over high heat, then the rice and then the paprika powder. Stir-fry it in medium heat until the rice is slightly transparent.｜インゲン、赤ピーマン（1cm幅に切ったもの）、米を加えて強火でサッと炒め、パプリカパウダーを加えて全体に混ぜ合わせる。
14. Add the warmed broth (3) and simmer for about 5 minutes until it reaches boiling point.｜温めておいたスープを加え、約5分煮込む。沸騰したら火を弱め、とろみが出るまで煮込む。
15. Reduce the heat to low heat, add the shrimp, squid cover the pan with aluminium foil to cook for 15 minutes (raising the heat at the last minute will produce a layer of crispy brown rice). ｜鶏肉、イカ、海老を戻し入れ、アルミ箔で蓋をして約15分煮込む。
16. Dress the pan in mussels, clams and green peas, set aside covered in aluminium foil to settle for 15 minutes before serving. ｜最後に強火にして、おこげをつけて火を止める。そのまま15分おいて蒸す。
17. Decorate with sliced lemon.｜蓋を外し、全体にグリーンピースを散らす。蒸したアサリとムール貝をのせ、4等分したレモンを添える。
