Butterbur in Dashi | 蕗(ふき)の出汁煮

Butterbur stems come in various sizes and thickness. The medium to thin finger size thickness is a spring seasonal delicacy. The simple clear bonito dashi accentuates the taste of the butterbur, the stem not having a strong flavor but a subtle fuki scent.  

フキノトウが終わると次はフキの茎が出回ります。

フキは事前処理(水につけてアク抜き)が多少手間がかかりますがシンプルな出汁に馴染ませるとフキの味と食感が一層引き立ちます。
