The season for Bamboo shoots comes April ~ May. They sprout as if rejoicing from hibernation, exploding to breath the spring air. The hidden tip of the bamboo is no doubt the most tender part, most valued. 

This dish is an Italian + Japanese collaborated cuisine, using a balsamic vinaigrette  with soy sauce. The balsamic vinaigrette sauce can also be used with other vegetables like onions, paprika, leaks; in fact anything ingredients which go well with balsamic vinegar.
