Osouzai (pronounced O-so-zai) which essentially means ‘Dishes’ or ‘Side Plates or Dishes’. A normal Japanese household will make a few dishes to accompany the rice and soup which is called ‘osouzai’ (or okazu).

This is an ‘osouzai’ (side dish) using pumpkins and bell peppers, vegetable which come abundant during the summer time. It may not be a main dish to the table but we like to have a variety of dishes on the dinner table without each being too filling to the stomach.

This recipe comes from a well known Japanese cooking specialist (Ms. Yoko Arimoto).






Bell Peppers and Pumpkin Nimono (Stewed)

  • 5 large green peppers
  • 1 medium size or half large pumpkin
  • 3 tablespoons olive oil
  • 2-3 tablespoons sugar
  • 4 tablespoons soy sauce
  • 100 ml (1/2 cup) water – adjust to the volume of vegetable
  1. Remove the placental tissue of the pumpkin, peeling some of the damaged outer skin. Cut the pumpkin to 1/8 pieces.
  2. Remove the seeds from the bell peppers, cut into half.
  3. Lay the pumpkin, bell peppers in a pot, add the olive oil and combined liquid (water + soy sauce + sugar).
  4. Stew until the pumpkin is soft and turn the heat off so the sauce will well soak into the vegetables before serving. (Heat once before serving)

Bell Peppers and Pumpkin Nimono (Stewed) | 南瓜とピーマンの煮物

  • 南瓜・・・・・・・・・・・・大1/2個、中1個
  • ピーマン・・・・・・・・・大5個
  • オリーブオイル・・・・・・大匙3
  • 砂糖・・・・・・・・・・・大匙2-3
  • 醤油・・・・・・・・・・・大匙4
  • 水・・・・・・・・・・・・100ml強(野菜の分量によって調整)
  1. 南瓜はへたをとり、皮をとこどころむいてくし形に切り、5~6等分に切り分ける。
  2. ピーマンは、二つ割りにして種を取り除く。
  3. ホウロウ鍋に南瓜とピーマンを敷き詰め、全体にオリーブオイルを南瓜にかけ、水、砂糖、醤油をあらかじめ混ぜ合わせ、落としぶたをして南瓜が柔らかくなるまで煮る。
  4. 一端、火を止めてから味をしみこませ、食べると美味しい。
