Apple Chiboust Cake | りんごのシブースト

Dawn of a fresh New Year – 2021; in honesty quite hesitant to say ‘happy’ from the bottom of my heart, the world aching, struggling and fighting with covid-19, yet in the midst of a long dark tunnel but hope to see a ray of light casting into the darkness with the vaccine in distribution and effect this year.

My blog posts had have been quite intermittent but I hope to see my New Years’ resolution in effect – 2021.

This is a birthday cake made last year for my granddaughter, who turned five on November 2nd.

Yes! even with covid-19 everyone’s birthday come along,  hoping to be the most memorable day of the year for her.

Apple Chiboust Cake (Pie)

This is a layered cake consisting of

  1. Pie Pastry
  2. Custard Cream
  3. Caramelized Apples
  4. Fresh Cream
  5. Chiboust
  6. Strawberry and sliced apples decoration

Chiboust is an interesting cake texture – an Italian meringue combined with custard cream solidified cold into a cake shape, similar texture to a mousse sets on top of a pie and its surface can be caramelized with a burner as see in the photograph.

It’s a fun cake to make and with the your favorite fruit decorations, suitable for various occassions and personal tastes.
